Ship Wreck!

I hate Valentine’s Day…I really have never seen the point.  If you are new in relationship, then everyday should be romantic, if you are settled in a relationship, I hope you don’t need Hallmark to tell you to value your partner, and if you are not in a relationship, then Valentine’s Day is a bloody disaster!

However, 12 years ago today at 1:30 in the morning my water’s broke and I really thought my first-born would be a Valentine’s baby, but no – she didn’t actually arrive until 9:57pm on the 16th – nearly three days later – on Pancake Day.   I like pancakes a lot better than valentine’s cards.

She celebrated her birthday with her friends this weekend.  Best. Party. Ever.   We booked two adjoining suites at the local Embassy Suites Hotel and let them have a fabulous sleepover.   We took them to the local restaurant to eat and then they pretty much spent the rest of the evening in the hotel pool – with ‘Sammy’ the huge inflatable dolphin.  I don’t know why he is called Sammy and I have learned not to ask…

  After swimming the girls got in their pajamas and we had cake and present opening, we also toasted Niamhy in sparkling grape juice with throw away plastic champagne glasses.  That amused them as she is 12 and if you turn the numbers about you get 21 when apparently I am buying them all champagne to toast her again….

They rounded off the evening by watching Megamind on the TV and I went to bed at midnight having made them promise not to sneak out of the hotel room…they are 12 – they stayed put…not sure that would have happened if they were 16…  at least I think they stayed put, they were all there in the morning.

The following morning they had a huge hotel breakfast of omelet’s, sausages, bacon, lots of bacon, pancakes, hash browns, fruit, bagels, cereals, and sweet pastries…between them they tried the lot…I had at least three cups of coffee – caffeinated.   Then they went back into the pool for an hour before we packed up and came home.  

makes me laugh that the fire brigade turn up for breakfast, but if I owned a hotel I would give the FB free breakfasts too...

By the time supper time arrived we were all feeling the effects of sleep deprivation so a Shipwreck Dinner seemed in order.  Looks horrible, cooks up fast and easy and the kids love it.

ShipWreck Dinner

1 lb. extra-lean ground beef

1 pkg. (7-1/4 oz.) Macaroni & Cheese prepackaged Dinner

1 can (14-1/2 oz.) stewed tomatoes, undrained

1 cup frozen peas

1 cup milk

1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese

Brown meat in large nonstick skillet on medium-high heat; drain. Return to skillet.

Stir in Macaroni, Cheese Sauce Mix, tomatoes, peas and milk. Bring to boil; cover. Simmer on medium-low heat 12 min. or until macaroni is tender, stirring occasionally.

Top with mozzarella. Remove from heat. Let stand, covered, 5 min. or until mozzarella is melted.

I used Cheddar as well as mozzarella
