Recipe for the 9th day of Christmas

Day nine is 9 ladies dancing, what are they dancing do you think?

The answer to that question is easy in our house – they are dancing the salsa!  Arriba!

Kicked up Salsa

Makes 2 cups

Prep:15 minutes

1 jalapeño pepper

1 8-oz bottle mild taco sauce

3 tablespoons lime juice

3 tablespoons chopped fresh cilantro (coriander)

1/2 cup diced tomato

1/2 cup diced onion

Seed and finely chop the jalapeño pepper.  In a medium bowl, combine jalapeño pepper, taco sauce, lime juice, cilantro, tomato and onion. (I split the salsa in half and added the jalapeño to one part as the girls won’t eat spicy food.)

That has got to be one of the easiest recipes out there!  It was pretty good too.  Although a little to limey for Andy’s tastes.  We ate it with homemade tacos, always a favorite.

The Christmas spirit has been knocked a little in our house…we are still doing all the things we normally do; on Saturday the girls got their toenails painted…Jojo had snowmen on hers and Imogen had Christmas trees, yesterday they went to the first ever children’s neighborhood cookie exchange and ended the evening with carol singing around a fire in a neighbor’s back yard.

BUT, the snow has meant that Granddad and Grandma’s flight has been cancelled from the UK.  Grandma couldn’t talk on the phone as she was crying, Imogen went to school with red eyes..no one is feeling it this morning, no one.

Niamhy’s Christmas concert will be less exciting for her without Grandparents cheering her on, and as for the Coffee with Grandparents event on Wednesday morning – it’s gonna be lame for her with parents instead.

    Will they be able to get another flight out?

      Highly doubtful. They are not in good health and live hours and hours from the airport. They took a taxi to the airport on Sunday night and stayed overnight, hoping their flight would not be cancelled and then had to take the blooming taxi home again…not something that they want to repeat with their health issues.

  3. I am getting so hacked off at this country’s total inability to cope with a bit of snow – it’s not like it’s that unprecedented. So sorry to hear about the grandparent’s flight, I’ve heard of a few people who’ve been dumped with similar Christmas disappointment and they only need to travel by road.

    I shall never poke fun at the Atlanta shut down in the wake of frost again.

    (well I might but I’ll wait a while!).

      Tell me about it! Niamhy played in her concert – without grandparents. Went to the Grandparents Coffee morning – without grandparents. She was even in a video they played at the coffee, saying how much she admired her grandparents for flying out each Christmas and thanking them for coming…
      Imogen keeps crying and is refusing to open any gifts her grandparents might have given her on the grounds it isn’t the same without them. It is a very non Christmas spirit mess at our house…thank goodness, my mom’s flight was not cancelled. In fact, hers was the first flight to make it to Atlanta. She is working extra hard at filling the space three grand parents normally fill, and I think, will be able to get Imogen to open gifts etc. You are right, in this day and age, there has to be a relatively cost effective way of coping….surely the amount the airports and airlines lost this time, justifies a little money spent on preventative measures! (and I have “let it snow, let it snow, let it snow’ on the brain – not funny, but kind of).
