I have been so looking forward to this one…edible golden rings? Onion rings of course!
I have never made these before, but have chowed down on hundreds over the years in restaurants…they were incredibly easy to make…the girls loved them and Andy would have loved them except his fiendish company, known now and forever more, as Grinch Inc. have sent him to frozen Detroit….then to New York, we are expecting him back for Christmas – do you hear me Grinch Inc.?
Golden Onion Rings
Prep: 15 minutes, Cook:2 minutes, Stand: 5 minutes
2.5 cups vegetable oil
1 cup all-purpose baking mix (I used Bisquick)
1/2 (12 ounce) bottle beer
1 teaspoon salt, divided
1 large sweet onion
In a large deep skillet (frying pan) over medium heat, heat the oil to 375. Place a wire rack on a baking sheet lined with paper towels.
In a medium bowl, combine baking mix, beer and 1/2 teaspoon salt. Stir until batter is smooth and thick.
Using a large knife, cut onion into 1/2 -inch-thick slices. Separate into rings. Dip onion rings into batter; making sure entire ring is covered, letting excess drip off.
Fry rings, in batches, in hot oil for 1 to 2 minutes, or until rings have puffed and are golden brown. Remove from oil with slotted spoon and place on prepared rack. Sprinkle with remaining 1/2 teaspoon salt. Let stand to cool for 5 minutes before serving.
