This is the most delicious and easy to made condiment on the planet! I have no idea why I didn’t know about this before…here in the US, you can buy balsamic syrup, but it is full of corn syrup and other nasties. Making it yourself is so easy there really is no point in buying.
Go buy yourself a bottle of balsamic vinegar – it does not have to be an expensive one – in fact cheap is just fine! Although connoisseurs will tell you the better the vinegar, the better the taste of the syrup..
Put the whole dang bottle in a sauce pan and boil until about 2/3 is reduced, this should take about 10 minutes. Then decant it into a pretty glass container (or in my case an empty plastic diet coke bottle), as it cools it will thicken into a syrupy consistency. I have had this on lots of things, its fabulous on chicken and wonderful on tomato and mozzarella salad – it is really yummy!
