While we were in England, my mother-in-law taught Niamhy how to make Lemon Fork Biscuits. I know Niamhy had a great time because she loves to cook and this was something just for her, I loved it because I feel these moments are what makes a family. I have fantasies that one day Niamhy will teach her grand children how to make them and tell them all about their Great Great Grandma too.
Niamhy made them again this week, but Niamhy being Niamhy, she made one batch of lemon fork biscuits, one batch of lime fork biscuits and one batch of orange fork biscuits….you go Niamhy.
Niamhy liked the lemon ones the best, but for me the orange ones pipped the post.
Lemon Fork Biscuits
4oz (100g) butter
2oz (50g) caster sugar
The find of one lemon (or lime, or orange)
5oz (125g) self –raising flour
Pre-heat the oven to 190c, Gas 4.
Cream the butter, sugar and zest until light, add the flour and pulse until the mixture comes together. Form into balls the size of a small walnut. Place on a sheet covered with non-stick paper. Flatten with a damp fork.
Bake for 10-15 minutes until lightly golden. Transfer to a rack to cool. Store in an airtight tin. (Hand written note from my mother in law – Yummy with puds.)
